For the uninitiated, imagine a rustic ceramic bowl, cradling layers of tarbais beans, bacon lardons and classic Toulouse style garlic sausage. This forms the bed for braised lamb shoulder and tomato stew with duck fat bread crumbs. Over all this, we lay a duck leg confit, cured overnight with herbs, then slowly stewed for hours in its own fat.
Referred to as the comfort meal to end all comfort meals.* This is not Haute Cuisine. This is rustic, countryside, peasant food at its finest.
