Southwest France encompasses the region from Bordeaux on the Atlantic coast south to the Spanish border and east to the Auvergne, the central plateau. Including the great wine region of Bordeaux and the Armagnac brandy region, the food may, at first glance, appear to be the poorer cousin of grape-juice. Not true! The region encompasses Gascony, the Perigord and Languedoc-Roussillon and thus some of the most iconic ingredients and dishes of France: pork, duck and goose; foie gras and truffles; mushrooms, chestnuts and prunes. There is seafood from the long Atlantic coast, and the Mediterranean, plus the cross-border influence of Spain. We invite you to indulge in this late-winter culinary journey.
