Dinner in Provence

In May of 2000, I moved to France, settling in Nice for the summer. I was there to learn French, but the beaches and the nights that finished in the late morning made that difficult. I lived across the street from the Cathedral in Nice and used its bell tower as my alarm clock. I quickly became an expert on pan bagnat and late at night I ate socca to suck up the alcohol. It was the greatest summer of my life and I will forever remember the flavors and smells of Provence. Come celebrate the beginning of summer that makes use of the fresh produce of the season.—Chef Peter WOOLSEY

1st: Soup au Pistou (Provencal vegetables, basil pistou, flageolet beans)

Wine Pairing: Domaine Saint Mitre “Cuvee”, Coteaux Varois Grenache/Syrah/Cinsault, Provence

2nd: Caviar d’aubergine (Eggplant caviar, Saffron toast points, side salad)

Wine Pairing: Domaine Saint Mitre Cuvee “Papillon” Syrah/Merlot/Cinsault , IGP Var

3rd: Blanquette d’Agneau (White wine braised lamb, pearl onions, mushrooms, carrots, rice)

Wine Pairing: Clos Cibonne Tibouren “Cuvee Tradition” Côtes de Provence

4th: Tarte aux Abricots (Apricot tart with Honey Chantilly Cream) 

Cocktail Pairing: “Le Premier Americain”  Brandy, Cointreau, Banyuls, Lemon, Angostura
