Tonight we are taking the opportunity to explore a range of sparkling wines, both from the Champagne region northeast of Paris, but also to taste a sparkling wine from Languedoc in France’s southwest. This time around, we have decided to start with the wine and then pair the food to it, instead of our more common approach of starting with the food.
