Winter is here!! Sweaters are a must wear, and rich and warming winter dishes are now on the menu. It is officially Cassoulet season!!! This traditional meat stew has different ingredients depending on the region you are in, and ours hails from Toulouse. The Toulouse Cassoulet is a rich lamb stew with white beans, confit duck leg, and Toulouse style sausage, lightly sweet and spiced with cinnamon and nutmeg. This dish is a MUST HAVE. Bistrot is also featuring Bœuf Bourguignon, rich red wine braised short rib, as well as a delicious chicken with morel mushroom cream. We have recently added Flammekeuche, an Alsatian pizza of bacon, crème fraîche and onion.
